Vegan Vegetable “Hamburger” Pie

Vegan Vegetable “Hamburger” Pie recipe from Down to Earth Organic and Natural.

Ingredients
Crust
- 3 cups all-purpose flour
- 2 sticks chilled vegan butter
- ¾ cup ice cold water, more if needed
Filling
- 4 medium potatoes, boiled and skins removed
- 3 Tablespoons olive oil
- 1 yellow onion, diced
- 3 garlic cloves
- 1 cup sliced mushrooms
- 1 carrot, diced
- ½ cup green peas
- 1(13 ounce) package of veggie meat crumbles
- 1 (1 ounce) package Quick gravy
- 2 Tablespoons tamari
- 1 Tablespoon hot sauce (optional)
- 1 ½ cups veggie broth
- Salt and pepper to taste
Instructions
- Place Crust ingredients into a food processor and process until dough ball forms. Place in fridge until ready to roll out.
- Slice boiled potatoes and set aside.
- In a large skillet heat oil to medium.
- Sauté onions and garlic until translucent. Add remaining Filling ingredients and let mixture stew for about 15 minutes. Turn off heat. Preheat oven to 350⁰.
- Once Filling has stewed, take dough out and divide into even 2 balls. Roll out first one and line a pie pan with it. Poke holes in the bottom with a fork.
- Fill pie, add mixture on bottom, then a layer of potatoes, then mixture and repeat until all ingredients are used.
- Roll out 2nd dough and cover pie, pinch the edges or crimp with a fork.
- Bake for 40-50 minutes, serve and enjoy!
