- 2 medium tomatoes, diced
- 1 medium red onion, diced
- 1 bunch cilantro, coarsely chopped
- ¼ teaspoon cayenne pepper, to taste
- 1 teaspoon red pepper chili flakes
- ¼ cup fruit flavored balsamic vinegar
- ¼ cup olive oil
- ¼ teaspoon Dijon mustard
- 2 Tablespoons agave
- ¼ cup water
- Salt and pepper, to taste
- In a large bowl, combine tomatoes, red onions, and cilantro.
- In a small bowl, whisk together Vinaigrette ingredients until well combined.
- Pour vinaigrette over tomato and red onion mixture. Toss to coat evenly.
- Serve with a slotted spoon and enjoy!
