Spirulina Energy Balls Recipe from Down to Earth Organic and Natural

Ingredients
  • 1 cup pitted dates
  • ¾ cup Brazil nuts, plus 2 Tablespoons coarsely chopped for rolling, if desired
  • ½ cup desiccated coconut, plus 2 Tablespoons extra for rolling, if desired
  • 3 Tablespoons raw cacao nibs
  • 1 Tablespoon spirulina powder
  • 2 Tablespoons raw cacao powder for rolling, if desired
  • 1 Tablespoon coconut oil (optional)
Instructions
  1. Place all ingredients except coconut oil in a food processor. Pulse to combine. You may add coconut oil if the mixture is too dry.
  2. Scoop out some mixture and roll it between your palms to shape into balls. If you wish, roll energy balls in chopped Brazil nuts, desiccated coconut, or cacao.
  3. Place in the refrigerator for at least 15 minutes to firm up. Serve and enjoy!
