Raw Falafel

Raw falafel is just as delicious – and so much more nutritious – than the original deep-fried version. Serve with Raw Tzatziki sauce for a great Greek treat.
Yield
20-25 falafels
Ingredients
  • ​1 cup walnuts ​​
  • 1½ cups almond meal
  • ​​3 Tablespoons tahini
  • ​​Juice of 1 lemon
  • ​​½ teaspoon red chili pepper flakes
  • ​​1 teaspoon garlic flakes
  • ​​1 teaspoon onion powder
  • ​​1 teaspoon paprika
  • ​​½ teaspoon coriander
  • ​​½ teaspoon cardamom
  • ½ cup chopped fresh cilantro
  • ​​1 cup chopped fresh parsley
  • ​​2 Tablespoons olive oil
  • ​​Salt and pepper to taste
Instructions
  1. Place all ingredients in a food processor and process until smooth.
  2. Roll into golf size balls and place on dehydrator tray.
  3. Dehydrate at 105° for 24 hours. Serve on a bed of lettuce or cabbage with you favorite sauce.
