Basil Cream

Basil Cream recipe from Down to Earth Organic and Natural.
Yield
1 ½ - 2 cups
Ingredients
  • 1½ cups cold heavy cream/whipping cream or vegan equivalent
  • 20-25 fresh sweet basil leaves
  • 3 Tablespoons brown sugar
Instructions
  1. Bring 1½ cups cream to a gentle simmer in a small saucepan over medium heat.
  2. Bruise basil leaves by hitting them repeatedly with the dull side of a knife.
  3. Stir basil leaves into cream for about 1 minute.
  4. Remove from heat, let cool for about 2 minutes. Cover tightly with plastic wrap and let steep for 25 minutes.
  5. Strain basil mixture through a fine sieve into a glass jar, pressing solids to extract liquid. Refrigerate until very cold, at least 5 hours.
  6. Whisk basil cream with sugar in a chilled bowl, or with a hand mixer on high speed until soft peaks form.
  7. Serve on top of a dessert, such as Pear Honey Toast, and enjoy!
