Raw Spinach Dip

Raw Spinach Dip recipe from Down to Earth Organic and Natural.

Ingredients

  • ½ cup chopped spinach + 1 cup
  • ½ cup macadamia nuts, soaked 2-4 hours
  • ½ cup raw cashews, soaked 2-4 hours
  • ½ cup raw sunflower seeds, soaked
  • ¼ cup nutritional yeast
  • ⅛ cup olive oil
  • 1 avocado, chopped
  • Juice of 2 lemons
  • 1 garlic clove, minced
  • Sea salt and ground pepper to taste
  • Water as needed
  • ½ cup raw sunflower seeds (unsoaked)
  • 1 small red pepper, diced
  • 2 Tablespoons red onion, diced
  • Sea salt and ground pepper to taste

Instructions

  1. Combine ½ cup spinach, macadamia nuts, cashews, sunflower seeds, nutritional yeast, olive oil, avocado, lemon juice, garlic, salt and pepper in a food processor and blend until smooth. Add ¼ Tablespoon water at a time if mixture is too dry.
  2. Transfer to a serving bowl. Add 1 cup chopped spinach, unsoaked sunflower seeds, red pepper and red onion. Mix together and serve with your favorite vegetables or crackers. Enjoy!
