Braised Kale w/ Shitake Mushrooms

Braised Kale recipe from Down to Earth Organic and Natural.

Ingredients
  • ½ cup blanched almond slivers
  • 1 head of curly kale, washed, dried, stems removed, and chopped
  • 3 Tablespoons Safflower oil
  • 1 small red onion, thinly sliced
  • 1 small red pepper, sliced
  • 6 shitake mushrooms, sliced
  • 3 garlic cloves, sliced
  • 3 Tablespoons capers
  • Salt and pepper to taste
  • Squeeze of lemon juice
  • Drizzle of olive oil
Instructions
  1. Heat sauté pan over high heat.
  2. Add almond slivers and toast until brown. Remove from pan and set aside.
  3. Add kale and toast until crisp. Remove and set aside.
  4. Add oil, onions, red peppers, and mushrooms and sauté until caramelized.
  5. Add garlic and capers.
  6. Place kale and almond slivers back into pan. Season with salt and pepper.
  7. Remove from heat, add a squeeze of lemon and drizzle with olive oil. Enjoy!
