Southern Black-Eyed Peas

Ingredients
  • 1 Tablespoon extra-virgin olive oil
  • 1 small onion, chopped
  • 2 small bay leaves
  • 2-3 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 cup chopped celery
  • 1 cup chopped red bell pepper
  • 1 cup chopped green bell pepper
  • 2 cans black-eyed peas, drained and rinsed
  • ½ teaspoon smoked paprika
  • 1 Tablespoon coconut palm sugar
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • Cayenne pepper, to taste
  • 1 teaspoon apple cider vinegar
  • Hot sauce, to taste (optional)
Instructions
  1. In a large saucepan over medium heat, heat olive oil and sauté onion until translucent. Add bay leaves and garlic. Sauté for one minute or until fragrant.
  2. Add vegetable broth, celery, bell peppers, black-eyed peas and smoked paprika. Bring to a boil.
  3. Lower heat and simmer. Add coconut palm sugar, salt, black pepper, cayenne, apple cider vinegar and hot sauce.
  4. Simmer for 20 minutes or until bell peppers are tender. Serve and enjoy!
