Ingredients
- 1 cup shredded coconut, soaked 4 hours
- ½ cup macadamia nuts, soaked 4 hours
- ½ cup chopped red bell pepper
- ¼ cup nutritional yeast
- Juice of 2 limes
- ¾ cup chopped fresh cilantro
- 1 garlic clove
- 2 Tablespoons chopped red onion
- ¼ teaspoon cayenne
- Salt to taste
- 1 teaspoon smoked paprika
- 2 large cucumbers, sliced into rounds
- Juice of 1 lemon
- 2 teaspoons ancho chili powder
- Salt and pepper to taste
Instructions
- Drain excess water off coconut and macadamia nuts.
- Combine coconut, nuts, red bell pepper, nutritional yeast, lime juice, cilantro, garlic, onion, cayenne, salt and smoked paprika in a food processor. Blend until smooth.
- Place cucumber slices in a large bowl and coat with lemon juice, ancho chili powder, salt and pepper.
- Spoon about a Tablespoon of coconut dip onto each cucumber slice. Place on a serving tray. Enjoy!
