Yield
16-20 servings
Ingredients

Crust

  • 1 cup finely processed graham cracker
  • ¼ cup brown sugar or coconut palm sugar
  • ½ cup macadamia nuts, chopped
  • 1 stick butter, softened at room temperature
  • Pinch of sea salt

Haupia Filling

  • 1 cup sugar
  • 1 (13.5-ounce) can or 2 cups coconut milk
  • 1 cup water
  • ½ cup cornstarch
  • 1 cup chopped chocolate bar or chocolate chips, melted over double boiler
  • ½ teaspoon vanilla extract
  • ¼ - ½ cup shredded coconut (optional)
Instructions
  1. Preheat oven to 350°. Lightly grease an 8x8 inch baking pan with butter.
  2. To make Crust, combine all Crust ingredients in a medium mixing bowl. Press dough into bottom of greased pan. Bake for 8-10 minutes. Remove from oven and let cool completely. Cooling is important because it allows the crust to set.
  3. To make Haupia Filling, add sugar and coconut milk in a saucepan over medium high heat. Whisk continuously to dissolve sugar. Bring almost to a boil, then lower heat to low.
  4. Combine water and cornstarch in a small bowl. Add cornstarch mixture to sugar and coconut milk mixture. Cook on medium heat and whisk continuously until mixture thickens into a thick pudding like consistency.
  5. Divide Haupia Filling into two bowls. Combine melted chocolate and vanilla extract with Haupia Filling in one of the bowls. This will be your chocolate haupia layer.
  6. Pour chocolate haupia filling over cooled crust. Then, pour plain haupia over chocolate layer. Cover and let set in the refrigerator for at least 2 hours.
  7. Remove from refrigerator and top with shredded coconut, if desired. Slice into small squares. Serve and enjoy!
