Chocolate Truffles

Loaded with fiber, protein, healthy fats and no sugar… the perfect healthy treat!!

8-12 Truffles
Ingredients
- 1 cup cooked black beans
- 2 heaping Tablespoons almond butter
- 1 heaping Tablespoon raw cacao
- 2 teaspoons coconut oil
- 1 teaspoon raw vanilla powder or vanilla extract
- Stevia to taste
- ½ cup shredded coconut, finely chopped nuts, and/or raw cacao powder, for garnish
Instructions
- Blend all ingredients, except for garnishes, together in a food processor until fully combined and creamy. You may need to scrape down sides occasionally. Place in refrigerator for 1 hour.
- Roll into balls and then roll in shredded coconut or your favorite finely chopped nuts to coat. Store in refrigerator for up to 4-5 days or in the freezer for up to a month. Enjoy!
