Spring Pea Salad

Ingredients
  • ½ cup packed mint leaves, torn
  • ¼ cup finely chopped dill
  • 1 Tablespoon capers, chopped
  • 1 shallot, thinly sliced or minced
  • 1 lemon, juiced and zested
  • ¼ cup extra virgin olive oil
  • 1 Tablespoon balsamic vinegar
  • 1 pound green peas, blanched (if fresh) or thawed (if frozen)
  • 2 1/2 - 3 cups roughly chopped walnuts
  • 1-2 cloves garlic, minced
  • Salt and pepper, to taste
  • ¼ cup packed mint leaves, to garnish (optional)
Instructions
  1. In a large salad bowl, toss all ingredients until well combined. Garnish with mint leaves, if desired. Enjoy at room temperature or chilled.
