Spring Pea Salad
Ingredients
- ½ cup packed mint leaves, torn
- ¼ cup finely chopped dill
- 1 Tablespoon capers, chopped
- 1 shallot, thinly sliced or minced
- 1 lemon, juiced and zested
- ¼ cup extra virgin olive oil
- 1 Tablespoon balsamic vinegar
- 1 pound green peas, blanched (if fresh) or thawed (if frozen)
- 2 1/2 - 3 cups roughly chopped walnuts
- 1-2 cloves garlic, minced
- Salt and pepper, to taste
- ¼ cup packed mint leaves, to garnish (optional)
Instructions
- In a large salad bowl, toss all ingredients until well combined. Garnish with mint leaves, if desired. Enjoy at room temperature or chilled.
