Tofu Poke with Local Vegetables

Ingredients

  • 1 (10-ounce) block extra firm tofu, drained and pressed dry
  • ½ cup chopped local tomatoes
  • ½ cup chopped local green onions
  • ½ cup chopped local onion
  • 1 teaspoon grated ginger
  • Pinch of chili pepper
  • ¼ teaspoon Hawaiian sea salt
  • ¼ cup tamari or liquid aminos
  • 2 teaspoons sesame oil
  • ¼ cup local avocado, chopped
  • 2 teaspoons gomasio or toasted sesame seeds
  • Lemon wedges

Instructions

  1. Cut tofu into ¼” cubes. Transfer to a large non-metallic bowl.
  2. Add tomatoes, onions, ginger, chili pepper, salt, tamari and sesame oil. Gently toss to combine.
  3. Cover bowl and refrigerate for at least 2 hours but no longer than 4 hours.
  4. Add avocado and gently toss to combine. Serve with gomasio and a few squeezes of lemon. Enjoy by itself or on top of rice drizzled with Wasabi Aioli and nori. Enjoy!
