Coconut and Macadamia Nut Rice

Ingredients
  • 2 cups jasmine rice
  • 1½ cups coconut milk
  • 1½ cups mock chicken broth
  • ½ teaspoon salt
  • ½ teaspoon white pepper
  • ⅓ cup bias-cut scallions
  • 1 cup chopped macadamia nuts
Instructions
  1. Combine jasmine rice with coconut milk, mock chicken broth, salt and pepper in a medium saucepan.
  2. Bring to a boil, reduce heat to simmer, cover, and cook for 20 minutes.
  3. Remove from heat and let sit, undisturbed, for 5 minutes.
  4. Add scallions and fluff with a fork.
  5. Garnish with macadamia nuts and enjoy!
