Ingredients
- 2 cups white Basmati rice
- 1 (15-ounce) can black beans
- 1 (15-ounce) can coconut milk
- 1 Tablespoon dried thyme
- 1 teaspoon garlic powder
- 1 Tablespoon hot sauce of choice
- Salt and pepper to taste
- 2 Tablespoon olive oil
- Water, if needed
Instructions
- In a large pot, wash and rinse rice until starch is washed away and water is clear. Pour off excess water, leaving rice in pot.
- Add beans with liquid into rice pot.
- Add coconut milk, thyme, garlic powder, hot sauce, salt and pepper. Stir to combine.
- Drizzle with olive oil.
- Add additional water if needed to ensure that liquid is about ½ inch over rice.
- Bring mixture to a boil, cover and simmer on low for 20-25 minutes.
- Serve and enjoy!
