Curried Coconut Cauliflower

This super easy weeknight recipe is more flavorful than you can imagine. Serve alongside beans, rice, curries, or in wraps.
3-4 Servings
  • 3 cups chopped cauliflower
  • ½ cup shredded coconut
  • 2 Tablespoons liquid coconut oil
  • 1-2 teaspoons curry powder
  • Pinch black pepper and sea salt
  1. Preheat oven to 375°.
  2. In a mixing bowl toss together cauliflower, coconut, coconut oil, curry powder, salt, and pepper.
  3. Pour into 9x13 baking dish and bake for 30-35 minutes, stirring halfway, or until cauliflower is golden. Enjoy!
