Fluffy Sweet Potato Biscuits

An easy-to-make alternative to traditional biscuits, and a great way to use up leftover mashed potatoes.

Ingredients
- 2 cups all-purpose flour
- 1 Tablespoon baking powder
- 1 teaspoon salt
- 1 cup mashed sweet potatoes
- ¼ cup vegan butter
- ¾ cup almond milk
Instructions
- Preheat oven to 375̊.
- In a medium mixing bowl, combine flour, baking powder, and salt.
- Create a well in the center of the dry ingredients and add mashed sweet potatoes, vegan butter, and almond milk. Mix until combined.
- Scoop batter onto a lined baking sheet, one Tablespoon at a time. Bake for 8-10 minutes, until golden brown.
