Southern Black-Eyed Peas

Ingredients
- 1 Tablespoon extra-virgin olive oil
- 1 small onion, chopped
- 2 small bay leaves
- 2-3 cloves garlic, minced
- 3 cups vegetable broth
- 1 cup chopped celery
- 1 cup chopped red bell pepper
- 1 cup chopped green bell pepper
- 2 cans black-eyed peas, drained and rinsed
- ½ teaspoon smoked paprika
- 1 Tablespoon coconut palm sugar
- ½ teaspoon sea salt
- ½ teaspoon black pepper
- Cayenne pepper, to taste
- 1 teaspoon apple cider vinegar
- Hot sauce, to taste (optional)
Instructions
- In a large saucepan over medium heat, heat olive oil and sauté onion until translucent. Add bay leaves and garlic. Sauté for one minute or until fragrant.
- Add vegetable broth, celery, bell peppers, black-eyed peas and smoked paprika. Bring to a boil.
- Lower heat and simmer. Add coconut palm sugar, salt, black pepper, cayenne, apple cider vinegar and hot sauce.
- Simmer for 20 minutes or until bell peppers are tender. Serve and enjoy!
