Mexican Chocolate Chip Banana Muffins

Ingredients

Dry

  • 1 1/2 cups of all purpose unbleached white flour
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ancho chili powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup mini chocolate chips
  • 1 Tablespoon cinnamon

Wet

  • 1 cup bananas, mashed
  • 3/4 cup almond or coconut milk
  • 1/3 cup coconut oil
  • 1 teaspoon vanilla
Instructions
  1. Preheat oven to 350°.
  2. Grease mini muffin tins.
  3. Combine all dry ingredinets in a bowl and mix well.
  4. Combine wet ingredients and mix.
  5. Add wet mix to the dry mix and stir until well combined.
  6. Scoop large heaping Tablespoon into the muffin tins.
  7. Bake 15-18 minutes until golden brown. Let cool and enjoy warm!
