Perfect Chocolate Chip Pancakes

Make sure your pan is hot and don’t stir your batter too much! That is the secret to “Perfect Pancakes”.

Ingredients
Dry:
- 1 cup all-purpose flour
- 1 teaspoon coconut palm sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon cinnamon
Wet:
- 1 Tablespoon chia seeds (plus 3 Tablespoons water)
- ¼ - ½ cup mini vegan chocolate chips
- 1 ¼ cups nut milk
- 1 teaspoon apple cider vinegar
- 1 Tablespoon coconut oil
2 Tablespoons coconut oil
Instructions
- In a large mixing bowl, combine all Dry ingredients.
- In a separate bowl combine the Wet ingredients. Make sure to stir so the chia seeds don’t clump. Stir for about 3-5 minutes.
- Once Wet ingredients are thoroughly, add Wet into Dry and mix just until combined.
- Heat coconut oil in a skillet and let pan get very hot.
- Use a ½ cup measuring cup and scoop batter into pan. You will be able to fit 3-4 pancakes at a time depending on the size of your skillet. Cook on one side until bubbles form and then flip over and cook for another 2 minutes until batter is firm and fully cooked.
