Tempeh Sausage

Tempeh sausage is packed with protein and flavor!

Ingredients
  • 1 package tempeh (8 ounces)
  • 1 apple, peeled and chopped
  • 1 Tablespoon apple cider vinegar
  • 1 Tablespoon maple syrup
  • 2 teaspoons paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 teaspoon rosemary
  • 1 teaspoon fennel
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • ½ teaspoon crushed red pepper
Instructions
  1. Preheat oven to 425̊.
  2. Bring water to a boil, add tempeh and boil for 12 minutes.
  3. Drain water and allow tempeh to cool.
  4. Break tempeh apart into small pieces. Add remaining ingredients and process in a food processor (optional: allow to marinade overnight).
  5. Form patties from tempeh and place on a lined baking sheet.
  6. Bake for 20 minutes, flipping halfway through cooking, until sausages are starting to burn around the edges.
