Ingredients
- 2 cups jasmine rice
- 1½ cups coconut milk
- 1½ cups mock chicken broth
- ½ teaspoon salt
- ½ teaspoon white pepper
- ⅓ cup bias-cut scallions
- 1 cup chopped macadamia nuts
Instructions
- Combine jasmine rice with coconut milk, mock chicken broth, salt and pepper in a medium saucepan.
- Bring to a boil, reduce heat to simmer, cover, and cook for 20 minutes.
- Remove from heat and let sit, undisturbed, for 5 minutes.
- Add scallions and fluff with a fork.
- Garnish with macadamia nuts and enjoy!
