Forbidden Rice Pudding

Ingredients
- 2 cups Forbidden rice
- 2 cups water, plus 4 more cups
- 2 cups coconut cream
- 1 Tablespoon vanilla
- 2 Tablespoons cacao
- Pinch of salt
- ¾ cup coconut palm sugar
- ½ cup shredded coconut, toasted
Instructions
- Wash and rinse rice in a large sauce pan.
- Add 2 cups of water, coconut cream, vanilla, cacao, salt and palm sugar.
- Stir the mixture and bring to a boil. Cover and reduce to a simmer.
- Every 30 minutes add 1 cup of water and mix, cover when complete.
- Cooking time is approximately 2 hours.
- Serve warm and top with toasted coconut. Enjoy!
