Forbidden Rice Pudding

Forbidden Rice Pudding recipe from Down to Earth Organic and Natural.

Ingredients
  • 2 cups Forbidden rice
  • 2 cups water, plus 4 more cups
  • 2 cups coconut cream
  • 1 Tablespoon vanilla
  • 2 Tablespoons cacao
  • Pinch of salt
  • ¾ cup coconut palm sugar
  • ½ cup shredded coconut, toasted
Instructions
  1. Wash and rinse rice in a large sauce pan.
  2. Add 2 cups of water, coconut cream, vanilla, cacao, salt and palm sugar.
  3. Stir the mixture and bring to a boil. Cover and reduce to a simmer.
  4. Every 30 minutes add 1 cup of water and mix, cover when complete.
  5. Cooking time is approximately 2 hours.
  6. Serve warm and top with toasted coconut. Enjoy!
