Luscious Lemon Cupcakes

  • 1¼ cups unbleached flour
  • 1½ cups whole wheat pastry flour
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ cup butter, softened
  • ¼ cup oil
  • 1½ cups sugar
  • 1 cup milk
  • ½ cup yogurt
  • 1 Tablespoon lemon zest
  • 2 teaspoons lemon extract
  1. Preheat oven to 350°. Line a muffin tin with cupcake sleeves and set aside.
  2. In a medium bowl, sift together flours, salt, baking powder and soda. Set aside.
  3. In a large bowl beat butter and oil together. Add sugar and mix. Add milk, yogurt, lemon zest and lemon extract. Mix until combined.
  4. Slowly add flour mixture to wet mixture and mix until just combined.
  5. Fill prepared cupcake sleeves.
  6. Place in the middle of the oven and bake 18-22 minutes.
  7. Cool completely and add your favorite frosting. Enjoy!
