Luscious Lemon Cupcakes
Ingredients
- 1¼ cups unbleached flour
- 1½ cups whole wheat pastry flour
- ¼ teaspoon salt
- ½ teaspoon baking powder
- 1 teaspoon baking soda
- ¼ cup butter, softened
- ¼ cup oil
- 1½ cups sugar
- 1 cup milk
- ½ cup yogurt
- 1 Tablespoon lemon zest
- 2 teaspoons lemon extract
Instructions
- Preheat oven to 350°. Line a muffin tin with cupcake sleeves and set aside.
- In a medium bowl, sift together flours, salt, baking powder and soda. Set aside.
- In a large bowl beat butter and oil together. Add sugar and mix. Add milk, yogurt, lemon zest and lemon extract. Mix until combined.
- Slowly add flour mixture to wet mixture and mix until just combined.
- Fill prepared cupcake sleeves.
- Place in the middle of the oven and bake 18-22 minutes.
- Cool completely and add your favorite frosting. Enjoy!
