Pumpkin Pecan Cupcakes

Pumpkin Pecan Cupcakes recipe from Down to Earth Organic and Natural.
Ingredients
  • ¾ cup canned pumpkin
  • ¼ cup apple sauce
  • 1½ teaspoons vanilla
  • ½ cup milk or milk alternative
  • ½ cup oil
  • ¾ cup brown sugar
  • 1½ cups chopped pecans
  • 1¼ cup whole wheat pastry flour
  • 1¼ cup unbleached flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ginger
  • ¼ teaspoon cloves
Instructions
  1. Preheat oven to 350°. Line a cupcake pan with paper liners. Set aside.
  2. In a large bowl, mix together pumpkin, apple sauce, vanilla, milk, oil and sugar.
  3. Add pecans and set aside.
  4. In a medium bowl, sift together flours, baking soda, baking powder and spices. Mix well.
  5. Gently fold dry ingredients into wet ingredients. Be careful not to over-mix.
  6. Pour batter into prepared cupcake pan.
  7. Bake 18-20 minutes or until center of cupcake bounces back to touch.
  8. Remove from oven, let cool, and frost with your favorite frosting. Enjoy!
