Pumpkin Pecan Cupcakes
Ingredients
- ¾ cup canned pumpkin
- ¼ cup apple sauce
- 1½ teaspoons vanilla
- ½ cup milk or milk alternative
- ½ cup oil
- ¾ cup brown sugar
- 1½ cups chopped pecans
- 1¼ cup whole wheat pastry flour
- 1¼ cup unbleached flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon ginger
- ¼ teaspoon cloves
Instructions
- Preheat oven to 350°. Line a cupcake pan with paper liners. Set aside.
- In a large bowl, mix together pumpkin, apple sauce, vanilla, milk, oil and sugar.
- Add pecans and set aside.
- In a medium bowl, sift together flours, baking soda, baking powder and spices. Mix well.
- Gently fold dry ingredients into wet ingredients. Be careful not to over-mix.
- Pour batter into prepared cupcake pan.
- Bake 18-20 minutes or until center of cupcake bounces back to touch.
- Remove from oven, let cool, and frost with your favorite frosting. Enjoy!
