Vegan Pumpkin Pie

Ingredients: 
  • 2 cups pumpkin puree
  • ½ cup maple syrup
  • 1 cup soy milk or any other non-dairy milk
  • ⅓ cup corn starch
  • ¾ cup sugar
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon sea salt
  • 1 prepared pie crust
Instructions: 
  1. Whisk all ingredients together.
  2. Pour into a prepared pie crust and bake at 350° for 50 minutes. Enjoy!
