Local Tomato Corn Salsa

Local Tomato Corn Salsa recipe from Down to Earth Organic and Natural.

1 - 1 1/2 cups
Ingredients
- 6 large local tomatoes
- ½ jalapeño, with seeds
- 2 cobs of corn
- ⅛ cup diced red onion
- ⅛ cup chopped green onion
- 1 clove garlic, minced
- 1 cup chopped cilantro
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 3 limes, juiced
- Salt and pepper to taste
Instructions
- Dice 4 tomatoes and place in a mixing bowl.
- Blend together remaining tomatoes and jalapeño in a blender. Add to diced tomatoes.
- Remove corn kernels from cob. Add to tomato mixture.
- Add remaining ingredients and mix well. Serve and enjoy!
