Mole Sauce

3 cups sauce
Ingredients
  • 3 Tablespoons olive oil
  • 3 cups diced red onion
  • 1 Tablespoon minced garlic
  • 3 Tablespoons chili powder
  • 1 Tablespoon honey
  • 1 teaspoon each sea salt, cumin, coriander, oregano and cinnamon
  • 1-2 teaspoon chili flakes
  • 2 cups vegetable broth
  • 1 cup pureed tomatoes
  • ⅓ cup chopped unsweetened chocolate
  • 2 Tablespoons natural peanut butter
  • 2 Tablespoons tahini
  • ¼ cup chopped raisins
  • 2 Tablespoons fresh lime juice
Instructions
  1. Heat oil in a large, heavy skillet. Add onion and garlic and cook over medium low heat until very browned, about 15 minutes.
  2. Stir in spices and cook one minute more. Add all remaining ingredients except lime juice. Stir until mixture is smooth and creamy, being sure to break up chunks of peanut butter. Lower heat and simmer for 20 minutes, stirring occasionally.
  3. Remove from heat and let cool slightly. For a creamier sauce, blend in food processor. Taste and adjust for salt and lime, and add more broth if wanted to thin sauce.
  4. Serve as a dipping sauce or drizzled on top of Sweet Potato Quesadillas. Store any extra sauce in the refrigerator for up to a week, or freeze leftovers. Enjoy!
