Ingredients

Bean Mixture

  • 2 (15 ounce) cans of white beans, rinsed and drained
  • 1 (15 ounce) can black eye peas, rinsed and drained
  • 2 (15 ounce) cans corn, drained
  • 1 cup diced red bell pepper
  • 1 jalapeño, deseeded and diced
  • ½ cup diced red onion
  • 3 roma tomatoes, deseeded and diced
  • 1 cup chopped cilantro

Dressing

  • ½ cup red wine vinegar
  • 2 teaspoons coconut nectar
  • ½ teaspoon garlic powder
  • ¼ cup olive oil
  • Salt and pepper to taste
  • Juice of 1 lime
Instructions
  1. Combine all Bean Mixture ingredients into a large bowl.
  2. In a separate bowl combine all the Dressing ingredients. Whisk together until well blended.
  3. Pour Dressing mixture over Bean Mixture. It’s best chilled at least 2 hours or more. Serve and enjoy with tortilla chips or crackers as a delicious dip.
