Easy Eggless Quiche Recipe from Down to Earth Organic and Natural

Ingredients
  • Vegetable oil to coat pan
  • 1 cup chopped mushrooms
  • 1 cup chopped onion
  • 1 cup chopped broccoli
  • 1 Tablespoon turmeric
  • 1 teaspoon dried basil
  • 1 Tablespoon garlic powder
  • Salt and pepper to taste
  • ½ cup vegetarian bacon bits
  • 3 Tablespoons water
  • 1 package firm tofu
  • ¼ cup ricotta cheese
  • 3 Tablespoons vegetable broth
  • 1 teaspoon turmeric
  • 1 pre-made pie crust
  • 1 cup grated pepper jack cheese
  • 1 cup grated Provolone cheese
  • Olive oil
Instructions
  1. Preheat oven to 425°.
  2. Heat oil in a sauté pan over medium-high heat. Add mushrooms and onions. Cook until caramelized.
  3. Add broccoli, seasonings, vegetarian bacon bits and water. Cook until broccoli softens. Remove from heat and set aside.
  4. Combine tofu, ricotta, broth and turmeric in a food processor. Process until mixture is smooth and creamy.
  5. Combine sautéed items and tofu mixture in a large bowl and mix well.
  6. Fill pie crust with mixture.
  7. Sprinkle top with grated cheeses and drizzle with olive oil.
  8. Place in the center of a baking sheet. Bake for 30 minutes or until golden brown. Enjoy!
