Yield
6-8 Servings
Ingredients
  • Whole wheat flour
  • 1 prepared pizza crust of choice

Pickled Onions

  • ½ red onion, thinly sliced
  • 1 teaspoon salt
  • 2 Tablespoons water
  • Juice of ½ a lime

Pizza Toppings

  • ½ cup extra virgin olive oil
  • 4-6 cloves garlic, minced
  • ¼ cup sliced olives
  • ¼ cup capers with juice
  • 1 Tablespoon dried rosemary
  • Salt and pepper to taste
  • 1 Tablespoon white miso
  • 1-2 pears, sliced into wedges
  • ¼ cup pine nuts or sliced almonds (optional)
  • ¼ cup crumbled feta cheese (optional)
Instructions
  1. Preheat oven to 500°. Dust a large baking sheet with flour. Place prepared pizza crust on baking sheet and set aside.
  2. Prepare Pickled Onions: Seperate onion slices, cover with salt and water in a small bowl. Let sit for about 15 minutes. Massage onions for 2-3 minutes. Drain. Squeeze any excess moisture from the onions and return to bowl. Pour lime juice over onions. Set aside.
  3. Meanwhile, heat oil in a large skillet over medium heat. Add garlic, olives, capers, rosemary, salt and pepper. Saute for 3-5 minutes or until garlic is softened and fragrant. Remove from heat. Whisk in miso until incorporated.
  4. Spoon about half of garlic mixture onto pizza crust. Top with pickled onions, pear slices, and pine nuts. Drizzle remaining garlic mixture over entire pizza.
  5. Bake for 10-15 minutes or until crust is golden brown. Top with feta cheese. Let cool before cutting. Serve and enjoy!
