Soba Curry

This dish is perfect for cold nights! Also makes amazing leftovers the next day!

Ingredients
- 1 (8-ounce) package soba noodles
- 1 Tablespoon vegetable oil
- 2 cups diced onion
- 3 large carrots, cut into ½” thick half moons
- 2½ teaspoons curry powder
- 2 cloves garlic, minced
- 3½ cups vegetable broth
- 2 cups cubed sweet potatoes
- 1 small apple or pear, cored and grated
- 3 Tablespoons ketchup
- 1 Tablespoon vegetarian Worcestershire sauce
- 1 Tablespoon miso
- 1-2 Tablespoons honey or agave
- 1 cup peas
Instructions
- Cook soba noodles according to package directions.
- Heat oil in a large pot over medium heat. Sauté onions 8-10 minutes or until they begin to brown.
- Add carrots and sauté for 5 minutes. Stir in curry powder and garlic, and cook 1 minute or until fragrant.
- Add broth, potatoes, apple, ketchup, Worcestershire sauce and miso. Bring to a simmer. Reduce heat to medium-low and cook for 30 minutes or until potatoes are tender.
- Drizzle honey on top and mix in peas. Serve on top of soba. Enjoy!
