Sopes

Sopes, although resembles tortillas, are much thicker. The outer shell is fried, while the inside remains soft. The raised edges help to hold its yummy fillings.
Ingredients
- 1 cup masa flour or fine cornmeal
- 1 cup mashed potato
- 3 Tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- ½ teaspoon oregano
- Pinch cayenne
- Salt and pepper to taste
- 2 teaspoons olive oil
- 3 Tablespoons water, plus more as needed
- ½ - 1 cup safflower oil
Instructions
- Combine all ingredients except water in a large bowl. Slowly add water and stir until dough is firm and smooth.
- To make sopes, form dough into 2-inch round balls using your hands. Flatten ball with hands or between wax paper. Pinch edges to form a rim. Sopes will resemble a small pie shell.
- Heat safflower oil in a large skillet - use enough to cover the bottom of skillet about ¼ inch deep. Once oil is hot, carefully add dough. Fry flat side for 5-10 minutes, or until golden brown. Flip, and fry for another 5-10 minutes.
- Remove sopes from pan and place onto a platter lined with paper towels
- To serve, fill sopes with your favorite ingredients such as refried beans, rice, salsa, and cheese. Enjoy!
