Vegan Paella

Vegan Paella recipe from Down to Earth Organic and Natural.

Ingredients
  • 3 Tablespoons safflower oil
  • 1 large yellow onion, diced
  • 1 jalapeño, deseeded and diced
  • 5 garlic cloves, crushed
  • 2 links vegetarian sausage, chopped
  • 2 cups basmati rice
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 summer squash, chopped
  • 1 ½ cups tomato puree
  • ¼ cup cilantro
  • 8 strings saffron
  • 1 Tablespoons fresh rosemary
  • 1 Tablespoon fresh thyme
  • 5 cups veggie broth
  • 1 (8-ounce) pack of vegan fish, cooked and chopped
  • 2 cups broccolini
  • Salt and pepper, to taste
  • Juice of 1 lemon      
Instructions
  1. In a very large skillet heat oil and sauté onion, jalapeño, garlic and veggie sausage.
  2. Push veggies to outer rim of sauté pan and create a circle in middle. Add a few more tablespoons of oil and place rice in circle. Stir rice and cook until it becomes a chalking white and almost browned.
  3. Add bell peppers, squash, tomato puree, cilantro, saffron, rosemary, thyme, and veggie broth. Stir all ingredients, bring to a boil, top with veggie fish and Broccolini.
  4. Cover and turn down heat to a low simmer and cook for 25- 30 minutes. Salt and pepper to taste. Squeeze the juice of 1 lemon before serving. Enjoy!
