Veggie Casserole

Ingredients: 

Casserole

  • 1 medium cauliflower, chopped
  • ½ cup sliced red bell pepper
  • ½ cup sliced yellow bell pepper
  • 2 cups string beans

Sauce

  • 4 Tablespoons nutritional yeast
  • 1 Tablespoon walnuts
  • 2 teaspoons fresh dill
  • 2 teaspoons olive oil
  • 1 teaspoon sage
  • 1 teaspoon salt
  • ¼ teaspoon cayenne pepper
  • Juice of 1 lemon

Topping

  • 5 Tablespoons bread crumbs
Instructions: 
  1. Steam veggies for 5-8 minutes and place into a small glass baking dish.
  2. Add all Sauce ingredients to a food processor and pulse until mixed.
  3. Set oven to broil.
  4. Pour sauce over veggies and sprinkle with bread crumbs.
  5. Broil for 3-5 minutes, or until golden brown.
  6. Remove from oven, let cool and enjoy.
