Ingredients
Crust:
- 2 Tablespoons shredded coconut
- 1 cup raw walnuts
- 1 cup raw macadamia nuts
- ½ packed cup pitted dates
- ½ teaspoon cinnamon
- Pinch of salt
Filling:
- 8 bananas
- 1½ cups cashews, soaked 20 minutes
- ½ cup shredded coconut, soaked 20 minutes
- ½ cup raw agave nectar
- 1 teaspoon cinnamon
- 1 Tablespoon vanilla extract*
- 1 cup raw coconut oil
- 3 Tablespoons lemon juice
*Not considered a raw product
Toppings:
- ½ cup chopped raw pecans
- ½ cup shredded coconut, soaked 20 minutes
Instructions
- Prepare Crust: Layer shredded coconut at the bottom of a spring form pan.
- Process Crust ingredients in a food processor until combined well. Press mixture firmly on top of shredded coconut.
- Prepare Filling: Slice 3 bananas and layer over Crust.
- In food processor, combine 5 bananas and remaining Filling ingredients. Process until creamy smooth. Pour over Crust.
- Sprinkle with Toppings. Place in freezer until firm - at least 2-3 hours. Serve and enjoy!
