Raw Spinach Dip

Raw Spinach Dip recipe from Down to Earth Organic and Natural.
Yield
1 ½ - 2 cups
Ingredients
- ½ cup chopped spinach + 1 cup
- ½ cup macadamia nuts, soaked 2-4 hours
- ½ cup raw cashews, soaked 2-4 hours
- ½ cup raw sunflower seeds, soaked
- ¼ cup nutritional yeast
- ⅛ cup olive oil
- 1 avocado, chopped
- Juice of 2 lemons
- 1 garlic clove, minced
- Sea salt and ground pepper to taste
- Water as needed
- ½ cup raw sunflower seeds (unsoaked)
- 1 small red pepper, diced
- 2 Tablespoons red onion, diced
- Sea salt and ground pepper to taste
Instructions
- Combine ½ cup spinach, macadamia nuts, cashews, sunflower seeds, nutritional yeast, olive oil, avocado, lemon juice, garlic, salt and pepper in a food processor and blend until smooth. Add ¼ Tablespoon water at a time if mixture is too dry.
- Transfer to a serving bowl. Add 1 cup chopped spinach, unsoaked sunflower seeds, red pepper and red onion. Mix together and serve with your favorite vegetables or crackers. Enjoy!
