Ingredients
- 4 cups Japanese cucumbers, seeded and sliced thin in half moon shape
- Marinade
- 2 Tablespoons lemon or lime juice
- 2 Tablespoons ume plum vinegar
- 2 cloves garlic, pressed
- 1/4 teaspoon hot chile pepper (minced) or sambal paste
- 1/4 cup cilantro, minced
Instructions
- Place cucumber in a mixing bowl.
- Combine Marinade ingredients and toss into cucumbers.
- Let marinate for 30mins to one hour.
- Drain cucumbers and toss in cilantro. Enjoy!
