Kale Salad with Creamy Citrus Cilantro Dressing
Ingredients
- I head kale, chopped
- 2 cups purple cabbage, shredded
- 2 carrots, ribboned
- 1 cucumber, thinly sliced
- ½ cup black olives
- ½ cup pumpkin seeds
Dressing
- 1 bunch cilantro
- 1 Tablespoon shallot
- Juice of 1 lime
- Juice of 1 orange
- 1 Tablespoon Dijon mustard
- ½ cup macadamia nuts
- 2 Tablespoons coconut nectar
- Salt and pepper to taste
- Water as needed for consistency
Instructions
- Place all salad ingredients in large bowl.
- Place Dressing ingredients in food processor or blender and combine until creamy.
- Pour Dressing over salad, toss and serve and enjoy!
