Kale Salad with Creamy Citrus Cilantro Dressing

Kale Salad recipe from Down to Earth Organic and Natural.
Yield
4-6 Servings
Ingredients
  • I head kale, chopped
  • 2 cups purple cabbage, shredded
  • 2 carrots, ribboned
  • 1 cucumber, thinly sliced
  • ½ cup black olives
  • ½ cup pumpkin seeds

Dressing

  • 1 bunch cilantro
  • 1 Tablespoon shallot
  • Juice of 1 lime
  • Juice of 1 orange
  • 1 Tablespoon Dijon mustard
  • ½ cup macadamia nuts
  • 2 Tablespoons coconut nectar
  • Salt and pepper to taste
  • Water as needed for consistency
Instructions
  1. Place all salad ingredients in large bowl.
  2. Place Dressing ingredients in food processor or blender and combine until creamy.
  3. Pour Dressing over salad, toss and serve and enjoy!
