Kale Salad with Ginger Hemp Dressing

The salad base for this is completely optional – feel free to mix together any of your favorite greens and salad staples. What makes this salad truly unique is the tasty and cleansing dressing! The intense, savory flavors of the dressing make it truly one-of-a-kind.

Ingredients: 

Salad

  • ½ bunch kale, chopped
  • 3 cups spinach
  • 2 cups chopped red peppers
  • 2 cups grated carrot
  • 1 cup sprouts
  • 1 cup cherry tomatoes, halved
  • ½ cup shredded red cabbage
  • ¼ cup raw hemp seeds (optional)
  • ¼ cup raw sunflower seeds (optional)

Ginger Hemp Dressing

  • ¼ cup apple cider vinegar
  • ¼ cup hemp oil
  • ¼ cup extra virgin olive oil
  • ¼ cup hemp seed
  • 1 Tablespoon grated ginger
  • 2 Tablespoons white miso
  • 6 Tablespoons maple syrup
  • 2 Tablespoons water
  • 1 lime, juiced
  • Salt and pepper, to taste
Instructions: 
  1. In a large salad bowl, combine Salad ingredients.
  2. In a high speed blender, blend Ginger Hemp Dressing ingredients until smooth.
  3. Pour Ginger Hemp Dressing over Salad. Serve and enjoy
