Spring Quinoa Salad

Ingredients
Quinoa Salad
- 2 cups water
- 1 cup quinoa
- ½ cup chopped fresh cilantro
- ½ cup chopped fresh basil
- ½ cup chopped fresh parsley
- ¼ cup chopped green onion
- 1 cup cherry tomatoes, halved
- ½ cup diced cucumber
- ¼ cup sliced red onion
- ⅓ cup pine nuts
- ¼ cup crumbled feta cheese
- Salt and pepper to taste
Dressing
- 2 lemons, juiced
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 2 Tablespoons agave
Instructions
- Pour water into a saucepan and stir in quinoa.
- Bring the liquid to a boil. Cover and simmer over low heat for 10-15 minutes, until all the liquid is absorbed.
- Remove quinoa from heat and let cool.
- Transfer cooled quinoa in a large bowl. Add remaining ingredients except for Dressing.
- Whisk together all Dressing ingredients in a small bowl, whisk together with a fork and pour over salad.
- Mix well and enjoy!
