Ingredients
- 1 medium daikon
- 1 cup sugar plum tomatoes, sliced
- ¼ cup chopped fresh basil
- Juice of 1 lime
- Salt and pepper, to taste
Dressing:
- ¼ cup olive oil
- ¼ cup balsamic vinegar
- ¼ cup red wine vinegar
- 3 garlic cloves, crushed
- 1 teaspoon diced shallot
- 2 Tablespoons maple syrup
Instructions
- Using a vegetable peeler, take off outer skin of the daikon.
- Continue to peel daikon into ribbons and place into a large bowl.
- Add sliced tomatoes.
- In a separate bowl, combine all Dressing ingredients.
- Pour ¼ Dressing on salad and save the rest for a different recipe. Salt and pepper to taste. Serve and enjoy!
