  • 1 medium daikon
  • 1 cup sugar plum tomatoes, sliced
  • ¼ cup chopped fresh basil
  • Juice of 1 lime
  • Salt and pepper, to taste


  •     ¼ cup olive oil
  •     ¼ cup balsamic vinegar
  •     ¼ cup red wine vinegar
  •     3 garlic cloves, crushed
  •     1 teaspoon diced shallot
  •     2 Tablespoons maple syrup


  1. Using a vegetable peeler, take off outer skin of the daikon.
  2. Continue to peel daikon into ribbons and place into a large bowl.
  3. Add sliced tomatoes.
  4. In a separate bowl, combine all Dressing ingredients.
  5. Pour ¼ Dressing on salad and save the rest for a different recipe. Salt and pepper to taste. Serve and enjoy!
