Seasonal Berry Crumble

Crumbles are a delicious way to use up an abundance of fruit, regardless of the season.
6-9 Servings


  • 4 cups mixed berries
  • 1/3-½ cup granulated sugar
  • 2 teaspoons lemon zest
  • 2 Tablespoons lemon juice
  • 2 Tablespoons cornstarch


  • ¼ cup whole wheat pastry flour
  • ¼ cup unbleached flour
  • ½ cup rolled oats
  • ¼ cup shredded coconut
  • ¼ cup packed brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup cold vegan margarine
  1. Preheat oven to 375°.
  2. Combine all Filling ingredients in a medium sized bowl. Mix well and set aside.
  3. To prepare Crumble: In a separate bowl combine, flours, oats, coconut, brown sugar, cinnamon and salt. Grate in cold vegan margarine. Mix until it resembles a coarse meal.
  4. Pour Filling mixture into an 8x8 baking dish. Top evenly with Crumble.
  5. Bake for 30-35 minutes until top is browned and fruit is bubbling. Serve while still warm. You can top it off with whip cream or ice cream. Enjoy!
