Raw Creamy Mushroom Soup
Enjoy this simple raw vegan soup made directly in your blender.
- 2 cups cashews, soaked 2- 4 hours
- ¼ cup shallot, chopped
- 1-2 cloves of garlic
- 1 ½ cups mushrooms
- 2-3 Tablespoons nama shoyu
- ½ lemon, juiced
- 4 cups water
- Salt and pepper, to taste
- Place all ingredients in a high powered blender, like a Vitamix.
- Blend on high for 5 minutes until soup begins to steam. Serve immediately and enjoy!
