Ingredients
Salad
- 1 cup sprouted quinoa
- 1 Japanese cucumber, diced
- 1 small red pepper, diced
- 2 Roma tomatoes, diced
- ¼ cup fresh chopped parsley
- 1 cup fresh chopped cilantro
- ¼ cup fresh chopped mint
- ½ cup raw sunflower seeds
Dressing
- ¼ cup olive oil
- ¼ cup fresh squeezed lemon
- 2 Tablespoons raw tahini
- Salt and pepper to taste
Instructions
- Place all Salad ingredients into a large bowl and toss together.
- Whisk Dressing ingredients together and pour over Salad and mix until well combined. Serve and enjoy!
