Vegan Fajitas

This healthy version of Fajitas is sure to please. It’s perfect for a quick easy meal.

Ingredients
- 4
veggie burger patties, thinly sliced lengthwise - 1
teaspoon cumin - 1
teaspoon chili powder - ½
teaspoon red pepper flakes - Pinch
cayenne - 3
Tablespoons Safflower oil - 1
medium onion, sliced - 1
diced jalapeño, deseeded - 1
diced Roma tomato, deseeded - 1
red pepper, sliced lengthwise - 1
green bell pepper, sliced lengthwise - 2
cups sliced mushrooms - 3 patty
pan squash, thinly sliced - 3
cloves garlic, pressed - Salt
and pepper to taste
Instructions
- Place veggie burger slices in a bowl and toss with
cumin, chili powder, red pepper flakes and cayenne. - Heat oil on high in a large non-stick skillet. Add
onions, jalapenos, and tomatoes. Cook until onions are translucent. - Add veggie burger slices. Continue to cook until well
browned - Add peppers, mushrooms, and squash and continue to
cook on high heat stirring not to let burn. - Once veggies have softened slightly, mix in garlic
and salt and pepper. - Serve immediately and Enjoy!
