Hawaii: In Real Life~eating local at Down to Earth

As you know, Kanu Hawaii is challenging people to take their Eat Local Challenge throughout September — this means eating locally produced products as much as possible, all month long. Whether you eat out or cook at home, though, it doesn’t have to be as big a challenge as you think it is.

Many local businesses carry local products; in fact, Down to Earth (@downtoearthfood) has been offering a large selection of local products for 34 years and is the only all-vegetarian store in Hawaii. We visited with “Mama T” (@dearmamaT) of Down to Earth to check out some of their products (many now on sale!) and get a quick lesson in making a very unique salsa.

Ingredients

  • 6 large tomatoes
  • 1/2 jalapeño, with seeds
  • 2 corn cobs
  • 1/8 cup diced red onion
  • 1/8 cup chopped green onion
  • 1 garlic clove, minced
  • 1 cup chopped cilantro
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 3 limes, juiced
  • salt and pepper to taste

Instructions

  1. Dice 4 tomatoes and place in a mixing bowl.
  2. Blend together remaining tomatoes and jalapeño in a blender. Combine with diced tomatoes.
  3. Remove corn kernels from husk. Add to tomato mixture.
  4. Add remaining ingredients and mix well. Serve and enjoy! Yields 1 – 1 1/2 cups
