16 servings
  • 1 cup carob chips, melted
  • 1 cup sorghum flour
  • ½ teaspoon sea salt
  • ¼ teaspoon baking powder
  • 2 flax eggs
  • ¾ cup coconut sugar or date sugar
  • ½ cup melted coconut oil, or any oil
  • ¼ cup water
  • 1 teaspoon pure vanilla extract
  • 1 cup carob chips, unmelted (optional)
  1. Start by preheating your oven to 325°F.
  2. Melt the carob chips.
  3. In a medium bowl, combine the flour, salt, and baking powder. Whisk them together thoroughly and set this bowl aside.
  4. In a different bowl, mix the flax eggs, sugar, and oil. Blend them for about 2 minutes until well combined. Now add water and vanilla extract to this mixture and blend again.
  5. Bring back the bowl with the flour mixture. Pour it into the bowl with the wet ingredients. Add in the melted carob from step 2. Stir everything together for about 3 minutes, ensuring it's well combined.
  6. Mix in an additional 1 cup of carob chips.
  7. Prepare an 8x8 inch square baking pan by greasing it and lining it with parchment paper. Pour the brownie mixture into the pan and spread it evenly.
  8. Bake in the preheated oven for 35 minutes.
  9. Once done, remove the pan from the oven. Let the brownies cool completely while still in the pan, placed on a wire rack.
  10. Once cooled, cut the brownies into your desired size (either 9, 12, or 16 pieces).
  11. Serve and enjoy your delicious carob brownies!
